Chimayo is a treasured chile pepper from a small town in New Mexico. The thin skinned fruits are easy to dry and make a wonderful chili powder with medium heat. Chimayo registers about 4,000 to 6,000 Scoville Heat Units, which makes it equal to a jalapeno. Very rare! Sunlight Preference
